Finally a pumpkin soup we actually like
Caramelize 2 finely chopped onions with a bit of salt
Add a cup or so of apple cider and grate in some fresh nutmeg
Add a bunch of steamed pumpkin pieces
Add water or broth and boil for 10 or so minutes
Process with immersion blender
Add a bunch of grated, smoked Applewood cheddar & stir until melted and smooth
Top with sour cream, toasted pumpkin seeds and fresh pepper.
Serve with warm Naan bread
These recipes are ones I've made up or modified from bits and pieces of other recipes. My family liked them, so I am trying to track and remember them. I wing it in the kitchen--precise measurements will more often than not be missing. Sorry about that, but I'm really only writing these for myself.
